Hummus recipe courtesy of "The Whole Foods Kosher Kitchen" by Levana Kirschenbaum
15 ounces of cooked good quality chickpeas; 2/3 cup tahini;1/4 cup fresh lemon juice;4 cloves of garlic; 1TBS. cumin; 1TBS. coriander; ground pepper to taste.
Process all ingredients until perfectly smooth. Just before serving, drizzle olive oil on top and paprika and fresh parsley. Serve with warm pita bread.
